System preferences -> Keyboard and Mouse  allows middle and right
buttons to be configured. 

Alt-3 gives a # symbol.

The default emacs is really basic so consider installing another
version e.g. Aquamacs. 

Virtual desktops are available in Leopard (Mac OS 10.5) and are called
"spaces". In earlier versions of OS X it is possible to get virtual
desktops by installing "desktop manager".

Several programming tools are not installed as standard (e.g. gcc) but
can be easily installed from the OS X DVD. 

Fink and Darwin Ports have lots of useful software which has been
ported to OS X (e.g. xv, gv, g95).
